May has been my month of fitness. My instagram and twitter handle also have shown me that a few others too have dedicated the month for fitness. I observe what I eat closely to ensure that it is healthy. I made this special recipe last week and its pictures have been posted on instagram and my Facebook page. The requests and likes prompted me to share it. I hope you have fun! Please give me your positive feedback if it is what you like.

Ingredients for making spinach sauce

1 large and diced tomato
1 large and diced onion
1 large red bell pepper
1 cup of diced spinach
1 scotch bonnet pepper
1 knorr / maggi cube
½ teaspoon of curry
2 tablespoonful of olive oil
Pinch of Salt to taste

Ingredients for making plantain
2 plantains
1 cup of water
Pinch of salt to taste

Procedure for cooking spinach sauce

  1. Add the olive oil in to a pan. Fry.
  2. Add the onions and on low heat, sauté till see through
  3. Add both peppers and tomatoes, fry
  4. Add salt, curry and the magi or knorr beef cubes
  5. Add the chopped spinach
  6. Taste the mixture after stirring properly.
  7. Add salt as necessary

Procedure for cooking the plantains
Add water to a cooking pot and bring it to a boil. As the water is boiling, peel the plantains and cut in to two. Add the plantains in to the pot of boiling water. Boil the mixture for 10 minutes. Check whether the plantains are well-cooked by putting a fork into them. If the fork passes easily, then you are good to go.

This meal serves two hungry people.
