Nigerian Beef and Yam Soup

You know at times you just don’t feel like eating the same boring meal over and over again and you rack your head for inspiration! No need to worry, here is the answer for you – Nigerian Beef and Yam Soup.
Here is how to cook it.

25 small pieces of beef cut into squares or cube
5½ cup beef stock
½ tablespoon soft brown sugar
1 onion roughly chopped
Bay leaf
1 sprig of fresh thyme or 1 teaspoon dry one
½ or 1 scotch bonnet pepper chopped
Tip: You can reduce or increase the pepper according to taste
1 tablespoon tomato puree or paste
2 medium size carrot diced
350g or 1 medium size Yam peeled and cut in squares
60g of fresh or frozen (ugu) leaves finely chopped
You can use spinach if you prefer
Salt to taste


In a medium pot,pour the beef sock
Add the squared beef, bay leaf, onion, brown sugar, thyme, scotch bonnet pepper and tomato paste or puree
Heat to boiling point then cover
Lower the heat and gently cook for about 1 ½ hour
Add the sliced carrot, yam and the pumpkin leaves
Flavour with salt to taste
Cook for another 10 minutes until the ugu and beef is soft
Your Nigerian Beef and Yam Soup is ready
